Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact. Rinse shrimp; pat dry with paper towels.
In a very large skillet, heat sesame oil over medium-high heat. Add shrimp, mushrooms and garlic; cook and stir for 4 to 6 minutes or just until shrimp are opaque. Carefully add baby bok choy; cook for 2 minutes more. Add pea pods, oyster sauce, soy sauce and black pepper to skillet; cook and stir for 1 minute more. Divide among four serving plates or bowls. Sprinkle with sesame seeds.
