Divide half of the bread cubes between 2 greased 2-quart rectangular baking dishes. Top with sausage, mushrooms and bell pepper. Sprinkle with cheeses. Place remaining bread cubes on top.
Combine eggs, milk, chives, oregano, salt and pepper in a large bowl. Pour half of the mixture over bread mixture in each baking dish. Cover and refrigerate for 2 to 24 hours.
Bake in a 325°F oven, uncovered, for 40 to 45 minutes or until a knife inserted near centers comes out clean. Let stand 10 minutes before serving.
