Lightly coat the inside of a 3 1/2- or 4-quart slow cooker with cooking spray; set aside.
In a large bowl combine cooked rice, 2 3/4 cups almond milk and sugar. Stir in dried fruit, butter, chia seeds (if desired), apple pie spice (or cinnamon-nutmeg mixture) and orange peel. Transfer mixture to the prepared cooker.
Cover and cook on Low for 2 to 3 hours. Stir gently before serving. If desired, serve with additional almond milk.
