Prepare mashed potatoes according to microwave package directions.
Meanwhile, sprinkle pork chops with salt and pepper. In a 12-inch skillet, heat oil over medium-high heat. Add chops; cook for 3 minutes. Turn chops over; add onion. Cook about 10 minutes more or until chops are done (160°F), turning chops to brown evenly and stirring onion occasionally. Transfer chops to serving plates.
Add tomatoes and vinaigrette to onion in skillet; cook and stir for 1 minute more. Spoon tomato mixture over chops; serve with mashed potatoes.
