Preheat oven to 350°F. In a large bowl, use a fork to beat together eggs and milk; stir in breadcrumbs, onion, 2 tablespoons parsley, salt, sage (basil or oregano) and pepper. Add ground meat; mix well. Lightly pat mixture into an 8-by-4-inch loaf pan.
Bake for 1 to 1 1/4 hours or until an instant-read thermometer inserted in center registers 160°F. Drain off fat. In a small bowl, combine ketchup, brown sugar and dry mustard; spread over meatloaf. Bake for 10 minutes more. Let stand for 10 minutes before serving. If desired, sprinkle with additional parsley.
