Place sweet potato slices in a 5- or 6-quart slow cooker. In a small bowl, stir together orange juice concentrate, water, brown sugar, salt, sage and thyme. Pour over the sweet potato slices; toss to coat. Dot with butter (or margarine).
Cover and cook on Low for 5 to 6 hours or on High for 2 1/2 to 3 hours. Before serving, stir the sweet potatoes to coat; sprinkle with bacon. If desired, garnish with fresh sage.
