In a nonstick skillet heat oil over medium heat. Add turkey sausage; cook until brown, using a wooden spoon to break up meat as it cooks. Drain off fat.
Coat a 3 1/2- or 4-quart slow cooker with cooking spray. Add sausage, mushrooms, sweet peppers, onions, pizza sauce, oregano and crushed red pepper. Stir to combine.
Cover and cook on low-heat setting for 4 to 4 1/2 hours or on high-heat for 2 to 2 1/4 hours.
Using a slotted spoon divide sausage mixture evenly among roll halves. Top each with some of the cheese.
