In a medium saucepan, combine water, cinnamon and salt (if desired). Bring to a boil; stir in oats. Cook for 5 minutes, stirring occasionally. Remove from heat. Cover and let stand until oatmeal reaches desired consistency.
Divide oatmeal mixture among four serving bowls. Top with apple (or pear), dates, almonds and brown sugar. If desired, serve with warm milk.
