Preheat broiler. Heat oil in a large skillet over medium heat. Add mushrooms, tofu, poblano, cumin and salt. Cook for 8 to 10 minutes or until mushrooms and pepper are tender, stirring occasionally. Remove from heat. Stir in 1/2 cup cheese and the sour cream.
Lightly grease a broiler-safe 3-quart rectangular baking dish; set aside. Wrap tortillas in damp paper towels. Microwave on High for about 30 seconds or until warm and softened. Spoon filling onto tortillas; roll up and place in the prepared baking dish. Sprinkle with the remaining 1/2 cup cheese.
Broil 4 to 5 inches from the heat for 1 to 2 minutes or until cheese is melted. If desired, top with tomatoes and green onions.
