Heat oil in a large skillet over medium heat. Add onions and garlic; cook for 10 minutes or until onions are golden, stirring frequently. Remove from heat. Stir in roasted red peppers and olives.
Preheat oven to 350°F. Coat a 10-inch quiche dish with cooking spray. Place bread cubes in the dish; top with the onion mixture and crumbled feta.
In a large bowl, beat together eggs, broth, wine (or more broth) and pepper. Pour the egg mixture over the bread mixture in the prepared dish. Bake for 35 to 45 minutes or until a knife inserted near the center comes out clean. Remove from the oven. Let stand 5 to 10 minutes before serving.
