In a large glass or stainless-steel bowl, combine feta cubes, Kalamata olives, green olives, roasted peppers and onion wedges.
In a screw-top jar, combine oil, vinegar, garlic, thyme, oregano and pepper. Cover and shake well. Pour over the mixture in the bowl; toss gently to coat.
Cover and marinate in the refrigerator for 4 to 6 hours. Spoon into decorative jars or glasses. Cover and store in the refrigerator for up to 2 days.
