(2 potato wedges, about 1/3 cup apple mixture, and 1/4 slice bacon each)
Preheat oven to 375°F. Scrub sweet potatoes; pat dry. Prick potatoes with a fork. If desired, wrap each potato in foil. Bake for 50 to 60 minutes or until tender. Cut each potato lengthwise into quarters. Sprinkle with salt and pepper.
In a large skillet combine apples and the water. Cook, covered, over medium heat for 3 minutes, stirring once or twice. Stir in maple syrup and, if desired, bourbon. Cook, uncovered, for 1 to 2 minutes more or until apples are tender and liquid is slightly thickened and coats the apples.
To serve, spoon apple mixture over potatoes. Chop bacon; sprinkle over potatoes.
