In a very large skillet, melt butter over medium heat. Add chicken; cook for 6 to 8 minutes or until no longer pink (170°F). Add mushrooms and bell pepper for the last 5 minutes of cooking time. Stir in flour. Cook and stir for 1 minute more. Add broth, lemon zest, lemon juice and thyme. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Season to taste with salt and pepper.
Meanwhile, prepare rice according to package directions. Serve chicken mixture over rice. If desired, serve with lemon wedges.
