Preheat oven to 350°F. Line cookie sheets with parchment paper; set aside. In a medium bowl combine flour, baking soda, and salt; set aside. In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar. Beat until combined, scraping sides of bowl occasionally. Beat in honey, eggs, and vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. Using a wooden spoon, stir in any remaining flour mixture, the oats, and peanuts.
Drop dough by rounded teaspoons 2 inches apart onto prepared cookie sheets. Lightly sprinkle tops with granulated sugar. Bake for 8 to 10 minutes or until cookies are golden. Cool on cookie sheets for 2 minutes. Transfer cookies to wire racks; cool.
