In a large bowl, combine egg, breadcrumbs, pepper, green onions, milk, salt and pepper. Add turkey and mix well. Shape the mixture into five 3/4-inch-thick patties.
Grill the patties on an uncovered grill directly over medium coals for 6 minutes. Turn the patties and brush with marmalade. Grill for 8 to 12 minutes more or until an instant-read thermometer inserted in the side of a patty registers 165°F. Toast cut sides of buns on grill. Serve the patties in buns and, if desired, with lettuce, tomato and onion.
