In a small bowl, stir together cumin and paprika. Sprinkle mixture over tomato slices; set aside.
Place tortillas between paper towels. Microwave on High for 20 to 40 seconds or until warm. Place a cheese slice in the center of each tortilla. Top with avocado, tomato, jalapeño (if desired) and the remaining cheese. Fold edges of tortillas up and over filling, pleating as necessary to enclose filling completely. Lightly coat outsides of sandwiches with cooking spray.
Preheat a panini grill according to the manufacturer's directions. Place sandwiches, half at a time if necessary and folded-sides down, in grill. (Make sure filling is still enclosed after placing sandwiches on the cooking surface.) Close lid and grill for 2 to 3 minutes, or until tortillas are toasted and filling is heated through.
