In a small bowl, stir together soy sauce, sesame oil and black pepper; set aside. Place a very large skillet or wok on a grill side burner over high heat. Add cooking oil; heat for 1 minute. Add garlic; stir-fry for 1 minute. Add peppers (and/or broccoli, carrots or sugar snap peas) and onion; stir-fry for 3 minutes. Add mushrooms; stir-fry for 2 to 3 minutes more or until vegetables are crisp-tender.
Add soy sauce mixture to pan. Cook and stir to coat vegetables. Transfer mixture to a serving dish. Sprinkle with sesame seeds.
