(about twelve 4-inch regular waffles or six 7-inch Belgian waffles)
Preheat oven to 300°F. In a large bowl, stir together flour, sugar, baking powder and salt. Make a well in the center of the flour mixture; set aside.
In a medium bowl, whisk together eggs, milk, oil (or butter) and vanilla. Add the egg mixture all at once to the flour mixture. Stir just until moistened (the batter should be slightly lumpy).
Preheat oven to 200°F. Lightly coat waffle maker with cooking spray and preheat according to manufacturer's directions. Add batter and bake according to manufacturer’s directions. Transfer the waffle to the oven to keep warm. Repeat the process with the remaining batter. If desired, serve with maple syrup.
