Preheat oven to 425°F. Using a serrated knife, cut bread diagonally into about 20 slices. Arrange bread slices on two large baking sheets. If desired, brush bread lightly with oil. Bake for 8 to 10 minutes or until light brown, turning once.
Meanwhile, in a large skillet cook and stir garlic in hot butter (or oil) over medium heat for 1 minute. Add mushrooms; cook for 6 to 8 minutes or until mushrooms are tender and most of the liquid is evaporated, stirring occasionally. Carefully add wine. Simmer, uncovered, for 4 to 5 minutes or until wine is nearly evaporated. Season to taste with salt and pepper.
Spoon mushroom mixture onto toasted bread slices. If desired, sprinkle with sage (or chives).
