Line an extra-large baking sheet with waxed paper; set aside. In a large saucepan, bring sugar, butter and half-and-half (or cream) to boiling, stirring to dissolve sugar. Remove from heat. Stir in chocolate pieces, cocoa, vanilla and mint extract. Stir until chocolate melts and mixture is smooth. Stir in oats, coconut and almonds.
Drop by rounded teaspoons onto prepared baking sheet or into paper bake cups set on baking sheet. Let stand about 1 hour or until set.
