Preheat oven to 375°F. Peel sweet potatoes; cut crosswise into 1/4-inch slices. Arrange sweet potatoes in a 2-quart square baking dish. Add the water; sprinkle with salt and black pepper. Bake, covered, about 30 minutes or until potatoes are tender; drain.
For salsa, in a medium nonstick skillet cook sausage, poblano pepper, and sweet pepper over medium heat for 3 to 5 minutes or just until peppers are tender, stirring occasionally. Add green onion; cook for 1 minute more. Remove from heat. Stir in cilantro and lime juice.
To serve, spoon salsa over potatoes. If desired, serve with lime wedges.
