Lightly sprinkle chicken with salt, pepper and 1/4 teaspoon ginger.
Heat oil in a skillet. Cook chicken over medium heat for 12 minutes, or until no longer pink. Transfer to a serving platter; cover and keep warm.
Add fruit and nuts to pan; cook, stirring frequently, 2 minutes. For sauce, stir together brown sugar, water, vinegar and the remaining 1/4 teaspoon ginger. Add to pan; cook and stir for 30 seconds.
