To prepare chicken: Heat a grill pan over medium-high heat. Brush chicken with oil and sprinkle with salt and pepper. Cook for 12 to 15 minutes or until chicken is no longer pink (170°F), turning once. Transfer chicken to a cutting board; cut into bite-size pieces.
To prepare dressing: In a small bowl, whisk together lemon juice, mayonnaise (or salad dressing), vinegar, salt, mustard, garlic and pepper. Gradually add oil in a slow, steady stream, whisking constantly until well mixed. Whisk in 1 tablespoon Parmesan.
Place lettuce in a serving bowl. Top with chicken, croutons, tomatoes and olives. Sprinkle with 4 teaspoons Parmesan. Drizzle with the dressing.
