Preheat oven to 350°F. Lightly grease a 13-by-9-inch baking pan with coconut oil; set aside.
Place 2/3 cup coconut oil in a small microwave-safe bowl. Microwave on High for about 20 seconds or until melted; set aside.
Stir together cocoa powder and baking soda in a large bowl; add half of the melted coconut oil, stirring to combine. Add the boiling water; stir until smooth. Add granulated sugar, brown sugar, eggs and the remaining melted coconut oil, stirring until smooth. Add coconut flour, vanilla and salt; stir until well mixed. Stir in dried cherries. Pour batter into prepared baking pan.
Bake for 20 to 25 minutes or until brownies appear set on top. Cool completely in pan on a wire rack. Cut into squares.
