Using a serrated knife, cut a thin slice off the bottom of each tomato so it will stand upright. Cut each tomato crosswise into three slices; set aside.
For vinaigrette, in a screw-top jar, combine oil, vinegar, and sugar. Cover and shake well.
To assemble, place 2 or 3 basil leaves on the bottom slice of each tomato. Top each with a slice of cheese and some of the onion. Repeat layering tomato slices, basil, cheese, and onion. Add the top slice of each tomato. Serve with vinaigrette, salt, and pepper.
