In a small saucepan, combine bourbon (or apple juice), soy sauce, brown sugar, vinegar, garlic, ginger and pepper. Bring to a boil; reduce heat. Simmer, uncovered, for about 10 minutes or until reduced to 1/2 cup. In a small bowl, stir together water and cornstarch. Stir into the bourbon mixture. Cook and stir until slightly thickened and bubbly; cook and stir 2 minutes more.
Grill chops on the rack of a covered gas or charcoal grill directly over medium heat for 14 to 16 minutes or until pink just in the center (145°F), turning once halfway through grilling. Brush occasionally with the sauce during the last 5 minutes of grilling. If desired, serve the chops with broccolini or mashed potatoes, drizzled with any unused sauce.
