Combine cider (or juice), sugar, cinnamon sticks, cloves and aniseed in a slow cooker. Cover and cook on Low for 3 1/2 to 4 hours or on High for 2 hours. Add orange and lemon slices. Cover and cook for 30 minutes minutes more.
Place a fine-mesh sieve over a large bowl; strain the mixture. (Or use a slotted spoon to remove the citrus slices and whole spices.) If using High, turn cooker to Low. Pour the strained mixture back into the slow cooker to keep warm.
Just before serving, add bourbon to the cider mixture.
