In a medium bowl, combine ground beef, Worcestershire and pepper. On wax paper, shape the mixture into 8 thin, 4-inch-diameter patties. Place 1 tablespoon cheese in center of 4 of the patties. Top with the remaining 4 patties; pinch edges together to seal.
Brush onion slices with oil; sprinkle with salt.
Grill the stuffed patties and the onion slices on the rack of a covered charcoal or gas grill directly over medium-high heat for 10 to 14 minutes or until patties are done (160°F), turning patties and onion slices once halfway through grilling. While patties and onion slices are grilling, brush cut sides of buns with oil and add buns, cut-sides down, to grill. Grill for about 1 minute or until toasted.
Serve burgers in buns with onion slices, spinach and the remaining cheese.
