In a blender or food processor, combine yogurt (or sour cream), cottage cheese, mayonnaise (or salad dressing), 1/4 cup blue cheese, salt and pepper. Cover and blend or process until smooth. Stir in remaining 1/2 to 3/4 cup blue cheese to taste. If necessary, stir in milk to reach the desired consistency. Serve immediately or cover and store in the refrigerator for up to 2 weeks. Stir or shake well before using.
