Stir together mayonnaise and thyme in a small bowl. Set aside 1 tablespoon of the mayonnaise mixture. Stir mustard into remaining mixture.
Spread mayonnaise-mustard mixture evenly over tortillas. Top evenly with roast beef, roasted peppers and blue cheese. Roll up tortillas; brush with reserved 1 tablespoon mayonnaise mixture.
Cook wraps in a large skillet over medium heat for about 2 minutes per side or until light brown. Cut wraps in half. Divide greens among salad dishes. Drizzle olive oil and sprinkle additional blue cheese over greens, if desired; top with halved wraps.
