In a small bowl stir together ranch dressing, the 1/4 cup cilantro, the lime juice, jalapeño pepper (if using), and cumin. In a large bowl combine chicken strips and barbecue sauce.
Place the salad greens in a very large bowl. Add dressing; toss to coat. Divide dressed greens among 8 dinner plates. Arrange cheese, beans, sweet pepper, avocado, and tomato on top of greens. Top with chicken mixture. If desired, garnish with tortilla chips and cilantro.
