Preheat oven to 350°F. Coat a 2-quart square or rectangular baking dish with cooking spray. Heat oil in a large skillet over medium heat. Add portobellos, onion and garlic; cook until mushrooms are tender, stirring occasionally.
Add broth and water; bring to boiling. Stir in rice and pepper. Transfer to the prepared baking dish. Bake, covered, for 35 minutes or until rice is tender.
Stir in chicken, Parmesan and parsley. Top with additional parsley.
