Preheat oven to 425°F. Toss carrots with 1 tablespoon oil and spread in a shallow roasting pan. Roast for 15 to 20 minutes or until just tender, stirring once. Cool in pan on a wire rack.
Place half of one avocado in a medium bowl and mash with a fork until smooth. Whisk vinegar, remaining 1/4 cup oil, salt, oregano and pepper into mashed avocado; set aside. Combine greens, remaining avocados, carrots, green onions and queso fresco in a very large bowl. Add dressing mixture and toss to combine.
