Cook noodles according to package directions; drain. Rinse with cold water until cool; drain.
If using fresh asparagus, cook in a covered saucepan in a small amount of lightly salted boiling water for 4 to 6 minutes or until crisp-tender. (Or, if using frozen asparagus, cook according to package directions.) Drain well.
Combine noodles, asparagus, carrots and pork in a large bowl. Cover and chill overnight.
Meanwhile, combine soy sauce, vinegar, honey, cooking oil, and sesame oil in a screw-top jar. Cover and shake well to mix, chill overnight.
Serve noodle mixture with the dressing.
