Preheat oven to 425ºF. In a large bowl, combine egg, onion, cornmeal, cilantro, chipotle peppers, oregano, cumin and salt. Add beef and pork. Mix well.
Shape mixture into 32 meatballs. Place meatballs 1/2 inch apart in a 15-by-10-inch baking pan. Bake, uncovered, for 12 to 15 minutes or until done (160ºF).
Remove pan from oven. Using a spatula, push meatballs together so they are touching on all sides. Sprinkle with cheese. Bake for 2 to 3 minutes more or until cheese is melted.
To serve, place each meatball on a tortilla chip. Serve with salsa.
