  • 1 cup sour cream
  • 2 tablespoons plus 2 teaspoons McCormick® Tasty Peppy Seasoning, divided
  • 2 portobello mushrooms, cut into 1/2-inch slices
  • 2 medium bell peppers, cut into 1/2-inch slices
  • 1 large yellow onion, cut into 1/2-inch slices
  • 1 cup frozen corn
  • 2 tablespoons oil
  • 8 (8-inch) flour tortillas, warmed

Instructions

  • Preheat oven to 400°F. For the Peppy Sour Cream, mix sour cream and 2 teaspoons of the Seasoning in small bowl until well blended. Cover and refrigerate until ready to serve.

  • Place mushrooms, bell peppers, onion and corn in large bowl. Add oil and remaining 2 tablespoons of the Seasoning; toss until well mixed. Spread veggie mixture in even layer on a large foil- or parchment-lined shallow baking pan sprayed with no stick cooking spray. Roast 25 minutes or until vegetables are tender.

  • Spoon veggie mixture into warm tortillas. Serve topped with Peppy Sour Cream and desired toppings.
