Fried Egg Tacos

Ingredients

  • 1 cup chopped plum tomatoes
  • 1 tablespoon lime juice
  • 2 teaspoons perfect pinch roasted garlic bell pepper seasoning, divided
  • 1 tablespoon butter
  • 6 eggs
  • 6 small flour tortillas, warmed
  • 1/4 cup crumbled queso fresco substitution Substitutions available
    • Cotija cheese
  • 6 slices bacon, crisply cooked and crumbled

INSTRUCTIONS

  • 1 Mix tomatoes, lime juice and 1 teaspoon of the Seasoning in medium bowl until well blended. Set aside.
  • 2 Melt butter in large skillet on medium heat. Break eggs into pan, one at a time, keeping each separate. Cook in batches, if necessary. Cook about 3 minutes or until whites are mostly solid. Remove pan from heat. Cover and let stand 3 minutes or until whites are set and yolks are still runny. Season with remaining 1 teaspoon Seasoning .
  • 3 For each taco, place 1 tortilla on plate. Top with tomato mixture, cheese, bacon and an egg. Sprinkle with additional Seasoning, if desired.
