 This recipe for bruschetta toasts can quickly transform a simple loaf of bread into a tasty appetizer. Ready to eat in under 15 minutes, all you need to do is lightly brush bread slices with the olive oil-parsley mixture and bake until golden brown. This easy toast recipe is easy to layer with various toppings like goat cheese and sautéed mushrooms, smoked salmon and chive cream cheese, whipped ricotta and honey or pickled cucumbers and onions. A great way to use leftover bread, these tiny toasts are also delicious for dipping into spreads or soups like Garlic Hummus, White Chicken Chili or spinach artichoke dip. Make a tray ahead of time to serve as hors d’oeuvres for a party or Easter brunch or to make an everyday dinner more festive!

INSTRUCTIONS

  • 1 Preheat oven to 425°F. Slice bread into 32 (1/2-inch thick) slices. Mix oil and parsley in small bowl. Brush oil mixture lightly on both sides of bread slices. Place in single layer on baking sheet.
  • 2 Bake 6 to 8 minutes or until crisp and light brown, turning once. Cool on wire rack.
  • 3 If not using immediately, store cooled toast in airtight container.
