Lemon Pepper Chicken with Herb Garlic Rice

Using marinades as more than just marinades has been one of my favorite go-to tricks in the kitchen. There are a variety of flavors that can be used for salad dressings, and even flavor base for rice! Lemon Pepper Chicken is a family favorite, and baking it always comes in handy because it frees me up to make a side dish while it cooks. I love pairing up my chicken with rice to complement the flavors.

3 skinless boneless chicken breasts
Lawry’s Lemon Pepper Marinade
Lawry’s Herb and Garlic Marinade
2 cups of long grain rice
2 cups chicken stock

1. Cut chicken breast in thirds
2. Toss in ½ a bottle of Lawry’s Lemon Pepper marinade
3. Place on greased foil-wrapped baking sheet
4. Bake at 350 degrees for 25-30 minutes or until chicken is well done
5. In a pot add rice, 1 cup of Lawry’s Herb and Garlic Marinade, 2 cups of Chicken stock and 1 cup of water.
6. Cook rice to a boil at medium-high heat then reduce heat to medium and cook until done (appx 30mins) 

TIP: Cooking with marinades doesn’t always mean you are going to use the product as a marinade. Marinades are an easy way to add flavor to other dishes: In this case, Herb & Garlic Marinade amps up ordinary rice. The lemon pepper flavors in the chicken complement the herb and garlic flavors of the rice since they're both citrusy. Add your favorite veggie and call it dinner!
