2 cups corn or flour tortilla chips
2 pounds chicken tenderloins
1 cup mayonnaise
1 package Lawry’s Taco Seasoning
Mix 1 can (14 ounces) corn, drained
1 can (14 ounces) black beans, drained and rinsed
1 jar (16 ounces) salsa
1 package (8 ounces) shredded Mexican cheese
Preheat oven to 375 degrees.
Spray a large casserole dish with oil.
Spread tortilla chips over the bottom of the dish.
Place chicken breast strips over the tortilla chips.
Evenly spread mayonnaise over chicken.
Sprinkle Lawry’s Taco Seasoning packet over the chicken and mayonnaise.
Evenly pour canned corn and black beans over chicken mixture.
Top with salsa.
Sprinkle evenly with shredded cheese.
Place in oven and bake for 30 to 35 minutes, or until chicken is fully cooked.
Let sit for 5 to 10 minutes.
Serve with extra chips on the side if desired. Enjoy!
