1½ cups orzo, cooked and cooled
1 pound shaved beef
½ cup plus 2 tablespoons Lawry’s Italian Marinade
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
2 cups baby arugula
In a medium bowl, toss shaved beef with ½ cup of Lawry’s Italian Marinade.
Cover and let meat marinate for 15 to 20 minutes.
Place cooked orzo, cherry tomatoes, red onion and arugula in a large serving bowl. Set aside.
Heat a grill or grill pan to medium-high. Grill shaved beef until meat turns just brown. Cook meat in batches, being careful not to overcrowd the grill.
Add meat to the serving bowl with 2 tablespoons Italian Marinade. Lightly toss together all the ingredients.
Serve immediately, or cover and place in the refrigerator for later.
