Melt butter in large saucepan on medium-high heat. Add onion, pepper and garlic; cook and stir 5 minutes or until onion is tender.
Stir in black-eyed peas, seasoned salt, black pepper, broth and turkey leg. Bring to boil on high heat. Reduce heat to low; cover and simmer 15 minutes or until peas are tender. Remove turkey leg, shred meat and add back to peas. Discard bone.
• If your grocery store doesn’t have frozen black-eyed peas, soak dried peas overnight. Increase broth to 2 cups, and simmer 1 to 1 ½ hours or until tender.
• To make a vegetarian version, use vegetable broth instead of chicken, and add a splash of liquid smoke instead of the turkey leg.
• Make black-eyed peas for New Year's for prosperity throughout the year.
