Ingredients 8 Servings

  • 1 tablespoon oil
  • 1 medium leek, cleaned and chopped
  • 1 medium carrot, chopped
  • 8 ounces cremini (baby bella) mushrooms, quartered
  • 1 pound lean beef stew meat, cut into 1/2-inch pieces
  • 1 container (32 ounces) Kitchen Basics® Organic Beef Stock
  • 3/4 cup pearl barley
  • 1 teaspoon McCormick Gourmet™ California Garlic Powder
  • 1/2 teaspoon McCormick Gourmet™ Mediterranean Oregano

INSTRUCTIONS

  • 1 Heat oil in large saucepan on medium-high heat. Add leek and carrot; cook and stir 5 minutes or until tender. Add mushrooms; cook and stir 5 minutes or until lightly browned.
  • 2 Stir in remaining ingredients. Bring to boil. Reduce heat to medium; simmer 30 minutes or until barley is tender.
