Heat 1 tablespoon of the oil in large heavy skillet on medium–high heat. Add shrimp and Seasoning; cook and stir 3 minutes or until shrimp turn pink. Remove from skillet. Set aside.
Heat remaining oil in same skillet. Add vegetables; cook and stir 2 minutes. Stir water and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 25 minutes.
Stir in shrimp. Cover and cook 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff rice with fork before serving.
