Black-Eyed Peas and Rice with Ham

INGREDIENTS

Servings: 5 (1 cup)

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup chopped carrot
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 2 1/2 cups water
  • 1 package Zatarain's® Black Eyed Peas & Rice
  • 8 ounces cooked ham, coarsely chopped

INSTRUCTIONS

  • 1 Heat oil in large skillet on medium heat. Add vegetables; cook and stir 3 minutes or until softened.
  • 2 Stir in water, Rice Mix and ham. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until most of the water is absorbed and rice is tender. Remove from heat. Let stand 5 minutes. Fluff with fork before serving.
