Pad Thai Primavera

Bring the exotic taste of Thailand to life in this creamy Pad Thai Primavera. It has all the traditional elements of Pad Thai – noodles, vegetables and fish sauce – plus Thai Kitchen® Coconut Milk for rich, non-dairy flavor. Garnish with cilantro, lime juice and crushed peanuts.

  • Cook noodles as directed on package.

  • Mix coconut milk, peanut butter and fish sauce in large skillet with whisk until well blended. Bring to simmer on medium heat. Add vegetables; cook and stir 3 to 5 minutes or until vegetables are tender-crisp. Add cooked noodles; cook and stir until heated through.

  • Sprinkle with peanuts and cilantro. Serve with lime wedges.
