Bring the exotic taste of Thailand to life in this creamy Pad Thai Primavera. It has all the traditional elements of Pad Thai – noodles, vegetables and fish sauce – plus Thai Kitchen® Coconut Milk for rich, non-dairy flavor. Garnish with cilantro, lime juice and crushed peanuts.
Cook noodles as directed on package.
Mix coconut milk, peanut butter and fish sauce in large skillet with whisk until well blended. Bring to simmer on medium heat. Add vegetables; cook and stir 3 to 5 minutes or until vegetables are tender-crisp. Add cooked noodles; cook and stir until heated through.
Sprinkle with peanuts and cilantro. Serve with lime wedges.
