GRILLED TUSCAN CHICKEN & VEGETABLES

Ingredients

1 1/2 pounds boneless skinless chicken breast halves

1 cup Lawry's® Tuscan Sun-Dried Tomato Marinade with Minced Garlic and Olive Oil , divided

1 red bell pepper, cored and quartered

1 yellow bell pepper, cored and quartered

1 small eggplant, sliced lengthwise into 1/2-inch thick slices

1 medium zucchini, sliced lengthwise into 1/2-inch thick slices

Directions

1. Place chicken in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade; turn to coat well.

2. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.

3. Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with 2 tablespoons of the remaining marinade halfway through cooking. Grill vegetables over medium heat 2 to 4 minutes per side or until tender-crisp, brushing occasionally with remaining marinade.
