SEASONED BLACK-EYED PEA FRITTERS

Ingredients

1 cup sour cream

2 1/2 teaspoons Lawry's® Seasoned Salt, divided

1/4 teaspoon Lawry's® Seasoned Pepper

2 cans (15 1/2 ounces each) black-eyed peas, drained and rinsed

2 eggs, lightly beaten

1 cup finely chopped onion

1/2 cup finely chopped red or orange bell pepper

1/2 cup flour

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/2 cup vegetable oil

Directions

1. Mix sour cream, 1/2 teaspoon of the seasoned salt and seasoned pepper in small bowl until well blended. Cover. Refrigerate until ready to serve.

2. Mash black-eyed peas in large bowl. Stir in remaining ingredients, except oil, until well blended.

3. Heat oil in large deep skillet on medium-high heat. Drop bean mixture into oil by 1/4-cupfuls, flattening slightly. Cook fritters, turning once, 7 minutes or until golden brown. Drain on paper towels. Keep warm while cooking remaining fritters. Serve warm fritters with sour cream mixture.
