Grilled Potatoes Three Ways



We can’t have a month dedicated to Irish food without talking about potatoes. Potatoes are surprisingly versatile. You can fry, bake, roast and grill them.

This month it’s time to fire up the grill again in honor of St. Patrick’s Day. But don’t worry, we’re about to give you three great ways to prepare potatoes on the grill with a festive flair—luck of the Irish not required.

GRILLED POTATO PACKETS
This savory recipe locks in flavor, for a tender serving of hearty Irish potatoes. And this side dish is easy to prepare!

Prep Time: 15 minutes
Cook Time: 20 minutes
Serves: 4

Ingredients
2 lbs. all-purpose potatoes, diced
1 medium onion, finely chopped
1/2 tsp. LAWRY’S® Seasoned Salt
1/2 tsp. LAWRY’S® Garlic Salt
1/2 tsp. LAWRY’S® Seasoned Pepper
1/4 cup Shedd's Spread Country Crock® Spread, melted

Directions
In large bowl, combine all ingredients except Spread; stir in Spread. Evenly divide mixture onto two 12 x 18-inch pieces of heavy-duty aluminum foil. Wrap foil loosely around potato mixture, sealing edges airtight with double fold. Grill, seam-side down, turning once, 20 minutes or until potatoes are tender.

Tip: To bake in the oven, on jelly-roll pan, arrange packets seam-side down. Bake at 450°F, turning once, 40 minutes or until potatoes are tender.

GRILLED RED POTATOES
You can’t have an Irish meal without potatoes. This recipe is simple, rich in flavor, and as festive as it gets. Try it with Irish spiced beef or crubeens.

Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 4

Ingredients
1 lb. small red potatoes, diced
2 Tbsp. Bertolli® Classico™ Olive Oil
1 tsp. LAWRY’S® Garlic Salt
1/4 tsp. LAWRY’S® Seasoned Pepper

Directions
In large bowl, combine all ingredients. On 20-inch piece heavy-duty aluminum foil, arrange mixture. Wrap foil loosely around potato mixture, sealing edges airtight with double fold. Grill, turning frequently, 30 minutes or until potatoes are tender.

GRILLED BAKED POTATOES
These taters are cooked twice—one in the microwave and once on the grill—for an extra special flavor.

Prep Time: 5 minutes
Cook Time: 17 minutes
Serves: 4

Ingredients
4 large baking potatoes
2 Tbsp. Shedd's Spread Country Crock® Spread
1 tsp. LAWRY’S® Seasoned Salt

Directions
1. Pierce potatoes with fork. Microwave at HIGH, turning once, 10 minutes or until almost done, then cut potatoes in half.
2. In large bowl, gently toss potatoes with Spread and LAWRY’S® Seasoned Salt. Grill over medium-low heat, turning occasionally, 7 minutes or until browned.
