INSTRUCTIONS

  • 1 Rinse rice with cool water until water runs clear. Drain well. Place rice in small saucepan or rice cooker pot. Add 1 cup cold water; let stand 20 minutes. Prepare rice according to package directions for stovetop or rice cooker (do not add any additional water). Once cooking is complete, let stand in saucepan or rice cooker 15 minutes. (If using a rice cooker, do not set to ‘keep warm’ setting, simply turn off or unplug once rice has finished cooking.)
  • 2 Mix vinegar and sugar in small saucepan. Bring to simmer on medium heat; simmer just until sugar is dissolved. Remove from heat. Transfer to small heat-safe glass bowl or measuring cup. Stir in Seasoning. Allow mixture to cool to room temperature.
  • 3 Place rice in large non-reactive bowl (glass or bamboo works great!). Add vinegar mixture. Stir gently with large spatula or wooden paddle until well blended. Allow rice to cool to room temperature. Makes 3 cups of rice.

    Test Kitchen Tips: For some extra umami flavor and more aromatic rice, try adding 1 sheet of kombu along with the rice when cooking. Kombu or konbu is edible kelp or seaweed, a common flavor enhancer used in Japanese cuisine. Simply place 1 sheet of kombu on top of the rice when cooking. This will impart the savory, umami flavor into your rice—after cooking, remove the kombu sheet and discard. Kombu can be found in the ethnic aisle in most grocery stores or at Asian markets and online retailers.
